Hello friends! How we doing?
Things have been pretty chill around here, which is kind of nice. Lots of trail runs, hiking, reading, lounging about, yoga, and of course pizza and wine. What else would you expect from us?
I ate all that cardamom granola I made last week (I know, it doesn’t last long around these parts) and when I went into the kitchen yesterday to make myself some breakfast I was slightly devastated that there wasn’t granola to top my yogurt with! So I whipped up another batch.
Hopefully this batch lasts a little bit longer. I have zero self control and ate 80% of the last batch dry, straight out of the container by the handful.
Monday morning I woke up feeling a little low energy, so I opted to just take Loki for a nice long hike instead of a run.
After our hike, Loki crashed pretty hard. He has a very hard life.
dinner and dessert was on point last night. Baked salmon, roasted broccoli and wild rice blend. Sadly, Jesse doesn’t care for fish. It kind of breaks my heart. Especially since this filet turned out so dang good. Oh well, more for me!
And then we had lemon bars for dessert. I lightened them up with greek yogurt but they do have regular ol’ sugar in them. (confession: at first I made the filling with coconut sugar, and forgot oh yeah lemon bars are suppose to be yellow, not poop brown. So I remade the filling). Spring weather makes me want all the lemon, citrusy things.
Oh and speaking of lemon & citrus. I may have picked up a few bags of my favorite Easter candies. Gotta have snacks for our road trip up to Jackson next week!
I’ll also bring my other favorite road trip snack – celery and NuttZo. It fits perfectly in your cup holder.
Did I mention we’re going up to Jackson (Wyoming…not Mississippi)? I love that little town. We’re hoping to get into the parks for a little early spring tour, but the roads might not be open to cars yet. We’ll see how it goes. Either way, I have some awesome road trip snacks and mixed tapes. Here’s a few pictures from some of our previous ventures up north.
We also went up to Glacier National Park last summer…I should probably get around to sharing those pictures too. Maybe have a little best of the west travel post series. Yeah, I like that plan.
