Hi! We’re glad you stopped by.
The Short “About Us” Story
What you’ll find here is a collection of stories from our life interjected between simple recipes, mostly desserts and baked goodies, often vegan, always delicious.
Want to know more? read on…
This is us, Aimee and Loki. I’m the gal, Loki is the cockapoo.
So what kind of blog is this?
Like I said before, what you’ll find here is a collection of stories from our life (hem hem, tons of Loki pictures) interjected between simple recipes, mostly desserts and baked goodies (occasionally a savory entree), often vegan, always delicious. I like to keep baking simple and healthy, which for me means using whole, in-season ingredients whenever possible. That being said, I promise you will not find any dessert recipes here laden with cans of beans. Life is too damn short for that. Also, I don’t weigh my ingredients because who has time for that?? My baking is an art, not science (which yes, I know, is contradictory to basically every other baking blog or cookbook out there).
We’re currently working on the travel bit of the ol’ blog. Look for Colorado and Rocky Mountain region must do’s, as well as some of our international travel adventure.
So wait, are you vegan?
No, I just find that its easy enough to bake without butter and eggs, often its healthier, and tasty enough that even your Uncle Bob (who thinks eating vegan means kale salads for days) will love these recipes.
Awesome! Can I share your recipes?
You may share an image and link back to the original recipe. All written content is exclusive to www.mtnmantras.com and cannot be reposted without permission. If you wish to repost a recipe’s content in full, please email me at mtnmantras(at)gmail(dot)com.
A little bit about the gal and pup…
We currently live in Colorado. I’m from a small town in Upstate New York, but Mr. Teeps is a Colorado Native. He wanted to get that bumper sticker for his car, but I wouldn’t let him.
I like yoga, running, shredding pow, baking all the things, traveling, reading, hiking, camping and drinking beer. Basically all the things you need to like in order to pass your Colorado naturalization test. Oh and if you have a dog, their leash MUST be made out of recycled climbing rope and a carabiner.
Loki likes long hikes off his climbing rope leash, chasing pinecones, swimming, sweet potato, stealing my pillow, and cuddling. Loki also goes by the monikers Mr. Teeps, Bompy and Loki Bear. So be prepared to see all those names. Loki is a cockapoo. That’s a cocker spaniel and toy poodle all swirled up into one energetic, needy, endlessly loyal, sweet hearted, too smart for his own good pup. Yes, I am obsessed with him.
You may also see this guy, my better half, from time to time. He’s from Boston, but we don’t hold that against him.
Thanks for stopping by! We hope you enjoy some good eats and reads here.
